Crock Pot Cubed Steak with Gravy

Image
Crock Pot Cubed Steak with Gravy I think my love for my slow cooker is pretty well known (well, at least to my family). It really is one of my most favorite kitchen appliances. It’s right up there with my stand mixer. It is the busy parent, busy worker, and beginner cook’s best friend. It can take a rather tough cut of meat, like what I am using in this Crock Pot Cubed Steak with Gravy recipe, and turns it into tenderness on a plate. Give me the gravy My favorite part of this recipe? The gravy. Oh mercy, the gravy. Me and gravy, it’s a love thang. So if you love your crock pot like I do, you gotta give this one a try. The cubed steak comes out so tender and the gravy is thick and rich and goes perfectly with some egg noodles or mashed potatoes! Ingredients: 1 packet of au jus gravy mix 1 can cream of chicken soup 1 can French onion soup 1/2 cup water 1 ½-2 pounds cubed steak to thicken gravy: 3 tbsp. cornstarch 3 tbsp. cold water Directions: In the bottom of a 6-quart slow cooker, com...

15-MINUTE SPICY FISH TACOS WITH SLAW

Image
15-MINUTE SPICY FISH TACOS WITH SLAW Easy-to-make spicy fish tacos with pan-fried white fish, slaw, and chipotle mayo. A healthier alternative to fried fish tacos ready in just 15 minutes!  A few years ago, there was a Mexican restaurant in Miami that had the BEST estilo baja tacos! Beer-battered deep fried fish, Mexican slaw, and chipotle aioli. YUM! Of course, not the healthiest taco but OMG SO GOOD. Literally was my favorite lunch spot. Until they closed. (hello darkness, my old friend) So bummed. But hey, that just means I had to learn to make them at home in a WAY healthier way. Because as you know, I HATE frying at home. If you’ve been a reader for a while (thank you!), I’m sure you’ve read about my hatred for frying here and pretty much everywhere on the blog. I digress. These spicy fish tacos are BOMB. If I do say so myself. They are tender, flavorful, juicy and the creamy, spicy chipotle mayo just makes them extra DELISH! I mean, who doesn’t love a kick in their tacos?! Yo...

T hen I came across a marinara meatloaf in The Complete Low-Carb Cookbook and it got me thinking. Vegan Bourbon Mushrooms and Rice

Image
Vegan Bourbon Mushrooms and Rice Bourbon mushrooms and rice is oh so very nice! What is totally amazing, super fast, sticky and sweet but refined sugar free? Answer: These vegan Bourbon mushrooms and rice! Quickly seared mushrooms, tossed in a sweet and salty, sticky Bourbon sauce. Served over rice! I’ve had Bourbon chicken in my youth, and I loved it. It wasn’t until recently I realized that originally the sauce didn’t actually have Bourbon it was just created by an Asian chef who worked on Bourbon street. I did actually put Bourbon in my sauce, some people do, some don’t. If those are the options though, I think yes to the Bourbon is always the right decision! The sauce generally will have brown sugar and ketchup, so I replaced those with coconut sugar and tomato paste, in an effort to make this a tiny bit healthier. Well, the first time I made these vegan Bourbon mushrooms and rice, it was gone in two point five seconds. I thought it was pretty dang incredible, and apparently my fam...

My poor baby Eliza got diagnosed with a dairy allergy a couple of weeks ago so I won’t be enjoying this Philly cheesesteak pasta anytime soon, but I can guarantee it will be one of the first meals I make when she outgrows the allergy, along with my Sloppy Joe Macaroni and Cheese! A meal loaded with pasta and cheese is the greatest that it gets. A cheesesteak, also known...

BAKED STUFFED FLANK STEAK Spice up your boring steak dinner by filling a fine cut of meat with spinach, mozzarella, and sun dried tomatoes. It's easy to tailor to your tastes, too! ABOUT BAKED STUFFED FLANK STEAK Since I’ve started this blog, our conversations about dinner typically go something like this: Me: “I need to make a recipe for the blog. What do you want me to cook for dinner?” Him: “Steak.” Me: “How do you want it prepared?” Him: “Just steak, nothing else.” Me: “But I have to make an actual recipe for this to work.” Him: “Okay. But I just want steak.” This is usually the part where I throw my hands up in the air and make a dessert instead. But not today! Today I found a happy medium between my steak-loving boyfriend and my desire to try out new and interesting recipes to share with you. Enter stage left: Baked Stuffed Flank Steak!
